Fried Cabbage with Bacon
serves 4
Ingredients
- 6 sl bacon, 1-inch pieces
- 1 C sweet onion, diced
- 3 cl garlic, minced
- 2 T Dijon or stone ground mustard
- 1/4 t smoked paprika
- 1 hd cabbage, sliced and chopped
- Options: fennel, apple
Instructions
- Fry the bacon until crispy, then set aside.
- Saute the onion in the bacon fat until translucent, then add the garlic, mustard, and paprika. Season to taste.
- Add the cabbage and options and continue cooking until the cabbage is soft and beginning to caramalize.
- Toss the cabbage mixture with the bacon, plate and serve hot.
